Collagen recipes for autumn: chai latte, pumpkin porridge and apple cinnamon yoghurt

Two tablespoons of collagen powder a day are stirred in quickly. Sticking with it is harder when it is the same glass of water every morning. So here are three recipes for the cooler weeks: a warm drink, a breakfast and one to prepare the evening before.

Each recipe contains exactly one daily portion, that is 20 g of powder. You have one of them per day, not all three.

First: one rule about temperature

The collagen itself is easy going. It is hydrolysed, dissolves cold or warm and does not gel. The vitamin C in our collagen powder complex is more sensitive: prolonged heating breaks it down. So always stir the powder in at the very end, once the pan is already off the heat. Do not cook it.

1. Chai latte with collagen

For 1 large cup, about 10 minutes

  • 100 ml water
  • 1 bag of black tea or rooibos
  • 250 ml milk or oat drink
  • ½ tsp cinnamon, a pinch each of ground cardamom, ginger and clove
  • 1 tsp honey or maple syrup, to taste
  • 20 g collagen powder (2 tbsp)
  1. Bring the water to the boil, let the tea steep for 4 to 5 minutes, remove the bag.
  2. Heat the milk with the spices in a small pan, but do not let it boil.
  3. Pour in the tea, take the pan off the heat and let it stand briefly.
  4. Stir in the collagen powder and sweetener, froth with a milk frother or whisk.

Tip: if you would rather not drink black tea in the evening, use rooibos. The taste stays close, the caffeine goes.

2. Pumpkin porridge with walnuts

For 1 portion, about 10 minutes with ready-made pumpkin purée

  • 50 g fine rolled oats
  • 200 ml milk or plant drink
  • 100 g pumpkin purée (Hokkaido, steamed and puréed)
  • ½ tsp cinnamon, a pinch each of nutmeg and salt
  • 1 tsp maple syrup
  • 20 g collagen powder (2 tbsp)
  • To sprinkle: 1 tbsp chopped walnuts, 1 tsp pumpkin seeds
  1. Bring the oats to the boil with the milk, pumpkin purée, spices and salt and let them swell over a low heat for 3 to 4 minutes, stirring.
  2. Take off the heat and let it cool for a minute.
  3. Stir in the collagen powder and maple syrup. If it gets too thick, add a splash of milk.
  4. Spoon into a bowl and sprinkle with walnuts and pumpkin seeds.

Tip: Hokkaido does not need peeling. Steam a larger batch of purée in advance, it keeps for two to three days in the fridge.

3. Apple cinnamon yoghurt for the next morning

For 1 jar, about 5 minutes the evening before

  • 150 g natural yoghurt or skyr
  • 1 small apple
  • 2 tbsp fine rolled oats
  • ½ tsp cinnamon
  • 20 g collagen powder (2 tbsp)
  • 1 tbsp chopped hazelnuts, 1 tsp honey if you like
  1. First stir the collagen powder smooth with two tablespoons of yoghurt, then add the rest. That way it spreads evenly.
  2. Coarsely grate the apple and fold it in with the oats and cinnamon.
  3. Fill into a jar with a lid and put it in the fridge overnight.
  4. In the morning, top with hazelnuts and a little honey.

Tip: a squeeze of lemon juice over the grated apple stops it from turning brown.

And when it has to be quick

It works without a recipe too, of course: 20 g in your morning coffee, in tea, a soup or a smoothie. The powder is neutral in taste. More on portion, timing and price per day is in the post Using collagen powder properly.

What is in the portion

Our collagen powder complex provides, per 20 g portion, multi-collagen hydrolysate from beef, fish, chicken and eggshell membrane with collagen types I, II, III, V and X. Added to that are 100 mg vitamin C, 4,545 µg biotin and 100 mg hyaluronic acid.

Vitamin C contributes to normal collagen formation for the normal function of skin. Biotin contributes to the maintenance of normal skin. Biotin contributes to the maintenance of normal hair.

Good to know: the powder contains collagen from fish and from eggshell membrane. If you have a relevant allergy, please check the ingredient list.
